We use only Specialty Grade coffee in our single-origins and blends, which is the top 3% of coffee beans in the world. These beans are inspected by hand and carefully roasted in small batches. The even screen size and lack of defects in Specialty Grade coffee allows the roastmaster to develop a consistent and even roast which brings out the unique characteristics of each varietal.

Just because a varietal possesses unique characteristics, however, does not mean it is easy to highlight. If a coffee is under-roasted, it tends to have a grassy taste that lacks body. If it a coffee is over-roasted, it carries a bitter and burnt taste. The roast profiles that Granito Coffee Works uses have been tested again and again to ensure that the perfect balance for each varietal is developed, highlighting its unique characteristics of body, acidity, and aroma.

Mark Nash, the Vice President of Operations at Granito Coffee Works, has played an important role in developing these custom roast profiles. He has undergone the Sensory Skills Aptitude Test of the Specialty Coffee Association of America (SCAA), and passed it with flying colors. Mark utilizes this skill along with his years of experience at Granito Coffee Works to identify the unique characteristics of each varietal (e.g., Kenya AA, Jamaica Blue Mountain, Nicaraguan Segovia), and ensure that they are developed fully through the roasting process.

Our flavored coffees (e.g., Lone Star Blend, Vanilla Nut, Hazelnut), are flavored with measure and balance in order to achieve perfect harmony between the coffee and the flavoring. We don't believe in over-flavoring cheap coffees, which is a tactic often used in the industry to drive up profits. Instead, we use a high quality, custom-roasted bean that is balanced with the added flavorings in order to provide you with a flavored coffee experience that is unforgettable.
